Ingredients
- 180g Ginger Nut Biscuits
- 80g Unsalted Butter (melted)
- 400g Full Fat Cream Cheese
- 400ml Double Cream
- 2 tsp Vanilla Extract
Instructions
- Start with the Homemade Crust: Crush your gingernut biscuits into fine crumbs using a food processor. Mix the crumbs with melted butter until you have a consistency that resembles wet sand. Press this mixture into the bottom of your springform pan using the back of a spoon or an offset spatula, ensuring it’s packed tight for the best results. Chill in the refrigerator to set while we create the filling.
- Prepare the Cheesecake Filling: In a large bowl, combine the room temperature cream cheese, double cream and vanilla extract. Using your hand mixer, the whisk attachment on your electric mixer and beat on medium speed until smooth. For the best fluffy texture, fold the mixture with rubber spatula gently to keep the air in.
- Assemble the Cheesecake: Pour the cream cheese mixture over your set Gingernut crust, smoothing the top with an offset spatula. Ensure the sides are clean for a beautiful presentation.
- Chill to Perfection: Cover your cheesecake with plastic wrap and let it set in the refrigerator for at least 3 hours, or overnight for the best results. This step is crucial for achieving the perfect combination of flavors and textures.

Notes
- If you are not a fan of gingernuts you can easily swap it out for Digestive Biscuits or Graham Crackers to create your homemade crust.
- Baking Butter (aka Baking Spread) is also a good alternative to unsalted butter as it will still help create that sandy mixture with the biscuits.
- Try to bring your cream cheese and double cream to room temperature before creating the filling.
- If your cheesecake is too funny, it may be because the cream wasn’t whipped enough, just pop it in the freezer for a couple of hours before serving to help it set.
- Store leftovers in an airtight container in the refrigerator to keep them fresh. This no bake cheesecake should last 3 days in the fridge, and 3 months if frozen.
- The consistency of the cheesecake should not be solid but it should be set and sliceable.
